Our Story
We are three Palestinians who didn't know each other before coming to Ireland. We met here in Dublin while completing our masters degrees through the Ireland Palestine Scholarship Programme, staying at the same accommodation during one of the most difficult times in our homeland's history.
What brought us together wasn't just being far from home, it was our shared passion for food. We would constantly invite each other over, cook together, and bond over the flavors and traditions of Palestinian cuisine. Those simple meals became more than just food, they became comfort, connection, and a way to keep our culture alive thousands of miles away.
That's when we decided: we wanted to share this love for Palestinian food with the people of Dublin. We wanted to bring not just incredible flavors, but the warmth, resilience, and hospitality of Palestinian culture to this city that has welcomed us with open arms.

Madleen isn't just about great food. One of our founders, Manal from Gaza, came to Ireland while her family remains in Gaza facing unimaginable hardship. Part of our mission is to support families in Gaza who continue to struggle during the ongoing war.

Palestinian Roz Ouzi

Palestinian Roz Ouzi is a traditional dish that reflects Palestinian heritage and hospitality.
